Angel Hair Squash

angelhairsquashPeople with celiac disease or those who choose to give up wheat for any reason often miss pasta dishes in their diets. This healthy substitute, from William Davis’ Wheat Belly 30-Minute (Or Less!) Cookbook, takes just 15 minutes – and pairs well with our slow-cooker balasamic chicken. 


  • 5 yellow squash
  • 1 Tbsp. extra-virgin olive oil
  • 1 Tbsp. butter
  • 1/4 tsp. sea salt


Using a julienne vegetable slicer, mandoline, or spiral slicer, cut the squash into matchsticks. (You should have 4 cups). In a large skillet over medium-high heat, heat the oil until hot. Cook the squash, stirring frequently, for 2 to 3 minutes, or just until it begins to wilt and softens slightly (do not overcook). Stire in the butter until melted and season with salt. Makes 4 servings. Calories: 96; protein 3 g; carbohydrates 8 g.
