Apple Cinnamon Raisin Crockpot Steel Cut Oatmeal

It comes from Julia Mueller, the vegetable-obsessed outdoor enthusiast and cookbook author whose blog ( carries the subtitle “Eat well, eat often.” Mueller apparently does, and she kicked off 2014 with this warm wake-up call for everyone welcoming (or wearily easing back into) a weekday, school-day, winter-day routine. 


  • 1 cup steel cut oats (use Bob’s Red Mill Gluten-Free if celiac disease is an issue)
  • 4 cups water
  • 1 cup canned coconut milk or 3 Tbsp. unsalted butter
  • 1 apple, peeled and chopped
  • 1/3 cup raisins
  • 1/2 cup raw walnuts, chopped
  • 2 tsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • almond milk, coconut milk or regular milk for serving


Add all of the ingredients to a crock pot and stir well. Place crock pot on the low setting for 7 to 9 hours, until liquid has been absorbed. If possible, stir oatmeal part of the way through. The Roasted Root blogger says this isn’t mandatory; you can set it and forget it and wake up to a house filled with the delicious aroma of a hot apple cinnamon breakfast. However, you must add some fat (either canned coconut milk or unsalted butter) so the oatmeal doesn’t stick to the sides of your crock.
