Apple Coleslaw

honeygreenThis no-cook recipe is great for summer, good with pulled pork, and easy to pack for picnics. Use red cabbage or red peppers for a pop of color or keep it all earthy and green. The apple and honey add a nice sweet tart contrast to the veggies. 


  • 1/2 small red or green cabbage, chopped
  • 1 tart apple (Granny Smith recommended), grated or chopped
  • 1 large stalk celery, chopped
  • 1 medium bell pepper (any color), chopped
  • 1/4 cup olive oil
  • juice of one lemon
  • 1 Tbsp. raw honey (Bocage recommended)
  • 1 tsp. celery seed
  • dash of sea salt


Toss the cabbage, apple, celery, and bell pepper together in a large bowl. In a smaller bowl, whisk remaining ingredients. Drizzle over slaw and toss to coat.
