Apple-Pecan Autumn Salad

It’s that time of year when we find ourselves looking for ways to add apples to our recipes. Combining them with toasted pecans is what gave this recipe its seasonal name. Serve as a sweet and savory side or alone for a healthy fall lunch. 


  • 2/3 cup canola oil
  • 1/3 cup apple cider vinegar
  • 2 packs stevia or 1 tsp. honey
  • 1/2 tsp. salt 
  • 1/8 tsp. pepper
  • 8 cups torn salad greens, chilled (1 pkg salad greens typically equals 8 cups)
  • 1 cup diced red skin apples
  • 1/4 cup crumbled blue cheese or shredded pecorino romano
  • 1 cup chopped, toasted pecans


Combine first 5 ingredients in a jar. Cover and shake vigorously. Chill until ready to use. (This step can be done the day before to shorten preparation time.) Combine greens, apples, cheese and pecans. Shake dressing again and toss with salad. Garnish with additional pecans.
