Arugula and Pear Salad

arugulapearPears often trail apples in popularity, but this nearly year-round fruit offers a host of health benefits. Though slightly higher in calories, the pear is also higher in fiber, aiding in digestion. Pears also provide a healthy dose of potassium, which improves heart health, as well as Vitamins C, K, and A, which help boost immunity, promote blood clotting, and maintain eye health. This 15-minute easy meal from Rachael Ray satisfies clean eating and can be made vegan and Paleo by substituting a non-dairy alternative for the cheese sprinkles. 


  • 1/2 cup walnuts, halved
  • 5-6 cups of arugula, cleaned and dried
  • 1 Bosc or Anjou pear, thinly sliced
  • juice of 1 lemon
  • 3 Tbsp. extra virgin olive oil 
  • Salt to taste
  • freshly ground pepper to taste
  • 8 oz. Gorgonzola or blue cheese


Toast nuts in small pan over medium heat until fragrant. Cool. Combine arugula and pear in a salad bowl. Add nuts, then dress salad with lemon juice and olive oil, salt and pepper. Top salad with gorgonzola or blue cheese crumbles.
