Baked Honey Sweet PotatoesDon’t wait until Thanksgiving to enjoy these homegrown sweet vegetables! Rich in vitamins A and C, iron, potassium, beta carotene and fiber, sweet potatoes should be a year-round staple. The Louisiana Sweet Potato Commission offers this simple recipe, with just five ingredients, helps make that an easy goal to achieve.

  • 2 Medium sweet potatoes
  • 4 Teaspoons honey
  • 1 Teaspoon cinnamon
  • 3 Teaspoons ginger
  • Nutmeg to taste

Preparation

Wrap sweet potato in foil. Bake at 500 degrees for 20 minutes, lower oven to 400 degrees, bake until tender. Let potato cool. Cut potato in half. Scoop out pulp, saving the shell. Add to pulp honey, cinnamon, ginger, and nutmeg. Beat potato mixture with electric mixer until smooth. Spoon mixture back into shells. Bake at 350 degrees for 20 minutes.
