Banana Ice Cream

178058705To continue healthy eating habits for 2014, let this Food Network “one-ingredient wonder” help battle late night cravings with aplomb. You get a tasty frozen treat that skimps on nothing but artificial ingredients and calories yet easily adds to your daily fruit & veggie count. 


  • medium-sized bananas (each yields about 1/2 cup of ice cream)


Slice over-ripe bananas into large pieces and place in a freezer-safe bag in the refrigerator at least 4 hours (overnight is better). Then, place frozen banana pieces into the bowl of a food processor fitted with a steel blade (we like the KitchenAid MiniChopper). Turn on the machine and process until they create a frosty yet creamy puree. Soft serve immediately or cover bowl with parchment paper to harden. Eat alone or top with sliced strawberries or natural peanut butter.
