Beef Taco Soup

  • 1 1/2 lbs. ground meat188012483
  • 1 onion, chopped
  • 1 (14.5 oz.) can petite diced tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 (10 oz.) can Rotel tomatoes & chilis
  • 1 (15.25 oz.) can whole kernel corn, undrained
  • 2 (16 oz.) cans Blue Runner red beans, undrained
  • 1 (14.5 oz.) can beef broth
  • 1 pkg. taco seasoning mix
  • 1 bunch green onions, chopped
  • 1 carton sour cream
  • 1 c. grated cheddar cheese

Brown ground meat and onions. Drain fat. Add next 7 ingredients. Simmer for 30 minutes. Serve with frito chips. Top with sour cream, chopped green onions 7 grated cheddar cheese. Serves 8-10.

    Not really being a big fan of hamburger meat anymore since finding out what they can label as meat products, I simply skipped the meat, substituted vegetable broth instead of beef broth, and used frozen mixed vegetables instead of red beans and meat. This turned out delicious! So what I am trying to say is that there are many ways of adjusting this to more your style! i will keep this recipe as a base for future soups! thank you!

      Great idea, Mary Alice! That makes this a great option for those of us trying meatless Mondays or trying to add more fruits/veggies to our diets. Thanks for sharing.
