Black Bean Salsa

  • 1553119031 (15 oz.) can black beans (rinsed and drained)
  • 1 c. frozen corn kernels (thawed)
  • 1/2 c. chopped red bell pepper
  • 1/2 c. chopped fresh cilantro
  • 3 tbsp. fresh squeezed lime juice (can substitute bottled lime juice but fresh is tastier) 
  • 8 small green onions chopped
  • 2 tbsp. balsamic vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin

Mix all of the above, stir well, and chill. Makes 5 cups. Serve with tortilla chips or thin crackers.
