Chicken Wraps with PB2 Sauce

PB2 is powdered peanut butter with just three ingredients. Add water and – voila! – you have peanut butter without the saturated or trans fats and far fewer calories. These Asian fusion chicken wraps make for a great weeknight dinner or an easy and tasty lunch box filler.

Ingredients

  • 2 Tbsp. olive oil
  • 1 lb. boneless chicken breast
  • 1/2 cup shredded lettuce
  • 2 cups shredded carrots
  • 16 oz. can chopped water chestnuts
  • 1/4 cup honey
  • 1/3 up PB2
  • 1 Tbsp. sesame oil
  • 2 Tbsp. Rice Wine Vinegar
  • 2 Tbsp. water
  • Hola Nola Flour Tortillas

Preparation

Heat oil in skillet and saute chicken until fully cooked. Combine sauce ingredients (the last 5 ingredients listed) in a shaker and shake well. Place even amounts of chicken and vegetables on each flour tortilla. Pour desired amount of sauce over ingredients and roll up.
