Chocolate Avocado Truffles

PBRCtrufflesYou’ll never believe what these truffles contain – and how delicious they are – until you make them yourself! Pennington Biomedical Research Center’s Research Kitchen developed a no-cook recipe for this sweet treat that contains avocado but tastes like pure chocolate.

Ingredients

  • 1/2 cup dark chocolate chips
  • 1 small ripe avocado, mashed
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 2 tsp cocoa powder
  • 1/8 tsp salt
  • Agave nectar to taste (may substitute maple syrup, honey or any natural sweetener)
  • Cocoa powder, coconut , or chopped nuts for coating

Preparation

Place chocolate chips into microwave safe bowl and microwave in 30 second increments. Stir chocolate after every 30-second period, until melted. Mash an avocado in a plastic baggie. Combine the melted chocolate, mashed avocado, vanilla, cinnamon, cocoa powder, and salt and stir til smooth. Taste the mixture and add Agave nectar or sweetener of your choice if desired. Refrigerate the mixture for about a half hour. When cooled and hardened, scoop into 8-12 balls and roll til smooth. Roll each ball in a chosen coating and enjoy.

Per serving: 100 calories, 1 g protein, 9 g carbs, 7 g fat, 3 g fiber
