Corn Maque Choux

  • 460489449-12 slices of bacon
  • 1 large chopped onion
  • 1 clove minced garlic
  • 1/2 chopped bell pepper
  • 4 ears fresh corn (or 2 cans of whole kernel corn)
  • 1 can stewed tomatoes

Cut corn from cob. Fry bacon until crisp and save grease. Saute onion, garlic, and bell pepper in bacon grease. Add corn and tomatoes. Cover and cook over medium-low heat until corn is tender (about 45 minutes; less if using canned corn). Add crumbled bacon before serving.
