Don’t Forget to Sweeten the Pot

SP_Facebook_Cover_PhotoAs crawfish season begins, the Louisiana Sweet Potato Commission reminds you to add yams to your mudbug mixture for the quintessential sweet and salty treat – not to mention great nutrition. In fact, sweet potatoes are ranked No. 1 in nutrition among all vegetables by the Center for Science in the Public Interest. Rich in Vitamins C and A, sweet potatoes are low in calories and also low glycemic, which means they don’t cause spikes in your blood sugar.

So how do you do it? Bring the water to a boil with all of the seasoning included. Add the fresh sweet potatoes (yams) to the boiling water and boil for 10 minutes, but do not remove. Add crawfish or crabs and once water returns to a boil, cook for an additional 8 minutes. Turn the fire off and soak the crawfish or crabs and sweet potatoes for an additional 10 minutes. Remove sweet potatoes and crawfish or crabs from the pot and serve. If using large yams, you may want to cut them into smaller portions after they are boiled.
