Hanley’s Strawberry Bleu Cheese-Bacon Salad

Make this spring salad in 15 minutes and then “dress it up” with Hanley’s Strawberry Vinaigrette made in the LSU AgCenter Food Incubator right here in Baton Rouge. It provides 3 of the 4-5 recommended daily servings of fruits and vegetables, as well as lots of fresh local flavor. Use as a main dish or an attractive side to grilled fish or meat. 
  • 4 cups fresh baby spinach
  • 2 cups sliced Louisiana Strawberries
  • 1 avocado, sliced
  • 1 cup bleu cheese crumbles (or feta)
  • 1 cup sliced almonds
  • 1 cup sautéed bacon pieces
  • 4 Tbsp. Hanley’s Strawberry Vinaigrette
Layer the baby spinach on a plate. Add the strawberries and avocados. Spread bleu cheese, bacon over, and almonds over the salad. Drizzle Hanley’s Strawberry Vinaigrette over salad. Indulge. Serves 4-6.
