Kale with Cranberries


A nutritional powerhouse, kale is often called the “queen of greens.” Low in calories (zero fat) but high in fiber, iron, calcium, antioxidants and vitamins K. A and C, kale is also anti-inflammatory helping consumers to fight against arthritis, asthma and autoimmune disorder. Eating kale also lowers cholesterol, making it good for heart health, and detoxes the body, making it good for liver health too! 


  • 2 bunches kale
  • 1/4 cup pine nuts
  • 1/4 cup dried cranberries
  • 3 Tbsp. olive oil


Steam until bright green or lightly saute kale in olive oil. Meanwhile, toast the pine nuts in a cast iron skillet. Allow kale and pine nuts to cool for five minutes, and then toss together in a large bowl. Add dried cranberries and olive oil. Toss and serve.
