Kale Smoothie with Pineapple and Banana

greensmoothieCelebrate St. Patrick’s Day or the beginning of spring with this Real Simple smoothie requiring just 5 ingredients and 5 minutes hands-on time. The result is a spring-grass green way to drink 3  of the daily recommended 5 servings of fruits and vegetables. Add chia seeds for a healthy dose of omega-3 fatty acids and antioxidants. Chia boosts fiber content and increases the feeling of being full and satisfied, reducing cravings and therefore cutting down on between meal snacking. 


  • 1/2 cup coconut milk
  • 2 cups stemmed and chopped kale
  • 1 1/2 cups chopped pineapple
  • 1 ripe banana, chopped
  • 1 tsp. chia seeds (optional)


Combine the coconut milk, 1/2 cup water, the kale, pineapple, and banana in a blender and puree until smooth, about 1 minute, adding more water to reach desired consistency. For easy blending, place the liquid in the blender first, then the greens. Fruit and other vegetables should go in last. Serves 2.
