Mediterranean Layered Dip

Mediterranean Layered DipHolly Clegg offers this tailgating favorite from her best-selling cookbook Kitchen 101. “Move over Tex-Mex Dip as these Greek-flavored layers make a stunning presentation,” Clegg says. “This is one of my go-to recipes any time I have company or have to bring a dip. I love the fact that you can  make it ahead of time and multiply the recipe to feed as many as you need.”

Another benefit, Clegg adds, is that the dip can be made ahead of time, or all of the ingredients can be kept chopped and ready to put together right at party time.

  • 1 (8 oz) package reduced-fat cream cheese
  • 1/2 cup nonfat Greek yogurt
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. minced garlic
  • 2 tsp. lemon juice
  • salt & pepper to taste
  • 1 1/2 cups roasted red pepper hummus
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1/3 cup chopped green onion
  • 1/4 cup crumbled reduced-fat Feta cheese
  • 3 Tbsp. sliced Kalamata or black olives

In bowl, blend together cream cheese, yogurt, oregano, garlic, lemon juice and season to taste.

Spread on large round serving plate.

Carefully spread hummus over cream cheese. Sprinkle evenly with remaining ingredients. Refrigerate until serving time.
