Mini Baked-Egg Casseroles

Christmas13DSC_0178_11295DSC_0178This baked breakfast treat requires just four ingredients and 15 mintues. Adapted from Wheat Belly 30-Minute (Or Less!) Cookbook, the kid-friendly dish is also wheat-free, low in carbs, and high in protein. 


  • 8 slices turkey bacon or Canadian bacon
  • 1/2 cup shredded smoked cheddar cheese 
  • 8 eggs
  • 2 Tbsp. finely chopped green onions, chives or scallion tops (optional)


Preheat oven to 350. Lightly coat 8 muffin cups with olive oil or spray. Line each muffin cup with 1 slice of bacon. Place 1 tablespoon of cheese in the bottom of each. Carefully break 1 egg into each muffin cup. Bake for 15 minutes, or until set and the whites are cooked but the yolks are still soft. Sprinkle with green onions or chives on top. Let stand for 5 minutes before removing from cups to serve. 

Per serving: 247 calories, 22 g protein, 1 g carbohydrates, 16 g total fat, 7 g saturated fat, 0 g fiber, 499 mg sodium.
