Parmesan Pesto Tilapia


Cooking doesn’t have to be complicated. In fact, nearly every healthy eating movement points toward whole foods prepared quickly and simply for optimal health. Bonus: less is actually more when it comes to flavor. Try this tasty 15-minute tilapia dish and you’ll see what we mean. 


  • 4 6-ounce tilapia filets
  • 1/4 cup basil pesto
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup fresh chopped tomatoes
  • salt & pepper to taste
  • 2 tbsp. fresh lemon juice


Preheat the broiler. Pat tilapia dry with a paper towel. Cover a baking sheet with foil and coat with olive oil cooking spray to prevent sticking. Place dry tilapia filets on the foil and sprinkle each filet with about 2 tablespoons of grated Parmesan cheese. Broil for 10-11 minutes or until the fish is no longer translucent and the cheese is browned on top. Remove from oven and top each fillet with a tablespoon of pesto and fresh tomatoes. If desired, dust each finished filet with grated cheese for a photo-worthy finish.
