Quick Rotisserie Chicken Salad

Hot chicken and fresh vegetables in healthy salad.

The key to good health is eating whole foods with minimal processing, but busy weeknights conspire against us. This time-saving recipe should help.


  • 1 whole Alexander’s rotisserie chicken, cooked
  • 1 pack butter lettuce or 1 pack salad shreds
  • 1 avocado, sliced
  • 1 pack trip-colored bell peppers, sliced
  • Zea’s Rotisserie Pepper Jelly Vinaigrette


Debone rotisserie chicken and cut into strips or chunks. Spread butter lettuce or shredded salad greens on plates. Top with rotisserie chicken, avocado and pepper slices, and top with pepper jelly vinaigrette. Optional additions: chopped tomato and croutons.
