Roasted Asparagus


Low in calories and very low in sodium, asparagus is a good source of calcium, fiber and protein, as well as many vitamins and minerals. This simple recipe is our favorite way to eat them – as a tasty appetizer or as side dish with cajun smoked salmon or grilled chicken. 


2 lbs. fresh asparagus, trimmed

2 Tbsp. olive oil

1/2 pinch ground sea salt

1/8 tsp. ground black pepper

3 Tbsp. Balsamic vinegar


Preheat oven to 400 degrees F. 

  • Place asparagus in a shallow 9×13-inch baking dish. Sprinkle with oil, salt, and pepper; toss to coat. 


Bake in preheated oven until lightly browned, 15 to 20 minutes. Drizzle with Balsamic vinegar just before serving.
