Roasted Garlic Brussels Sprouts

brusselssproutsEnjoy this cool-weather cruciferous vegetable (and the iron, fiber, folate, and vitamins that come with it) as a side dish. The first description of this member of the cabbage family came from – you guessed it – Belgium. Recipe courtesy of Food Network. 


  • 1 1/4 lb. brussels sprouts, halved
  • 2 tbsp. olive oil
  • 2 chopped garlic cloves
  • 1/2 tsp. cumin seeds
  • 1/2 tsp. kosher salt
  • 1 tbsp. brown sugar
  • juice of 1/2 lemon
  • pinch of red pepper flakes
  • fresh cilantro


Preheat oven to 450. Heat olive oil in a small skillet over medium heat; add garlic cloves, cumin and salt. Cook 2 minutes. Stir in brown sugar, lemon juice, and red pepper flakes. Toss with brussels sprouts and place on a baking sheet. Roast at 450 degrees F until tender, 18-24 minutes. Toss with torn cilantro.
