Slow-Cooker Abita Pulled Pork

Summertime means trips to the beach or ballpark or just more time in the backyard, which means less time in the kitchen. Thank God for this recipe for pulled pork sandwiches – it almost cooks itself! Abita Root Beer gives it a distinct local flavor, and choosing your own sauce lets you customize it for your family. Enjoy.Meat sandwich

  • 1 pork tenderloin (about 2 pounds)
  • 1 12 oz. bottle Abita Root Beer
  • salt to taste
  • 1/2 to 1 cup of your favorite barbecue sauce (Miss Lynn loves Sweet Baby Ray’s)
  • Hawaiian rolls or bread of choice

Rub salt or seasoned salt onto pork tenderloin until coated. (If you like a fattier meat and the flavor that comes with it, you can substitute a 2-2.5 pound pork butt for the tenderloin). Place pork into a slow cooker and pour a 12-oz. bottle of Abita Root beer over it. Slow cook on low for 6-8 hours. Midway through cooking or after at least 4 hours, shred pork with two forks and pour in 1/2 cup of barbecue sauce. You may add more barbecue sauce before serving, as per your preference. Toast Hawaiian rolls (or your favorite bread) on a panini press or open grill. Serve with a side of coleslaw, apple slaw or grilled pineapple
