Slow Cooker Balsamic Chicken

Pull that crockpot out of the cabinet and put it to good use with this easy fix-it-and-leave-it favorite that tastes like you slaved over a stove all day. Bonus: leftover chicken is great the next day in a wrap or salad.  


  • 4-6 boneless, skinless, chicken breasts (about 40 ounces)
  • 2 (14.5 oz) cans diced tomatoes
  • 1 medium onion thinly sliced (not chopped)
  • 4 garlic cloves
  • 1/2 cup balsamic vinegar (to make gluten-free, use White Balsamic Vinegar)
  • 1 Tbsp. olive oil
  • 1 tsp. dried oregano
  • 1 tsp. basil
  • 1 tsp. rosemary
  • 1/2 tsp. thyme
  • freshly ground black pepper to taste
  • salt to taste


Pour the olive oil on the bottom of the slow cooker. Add chicken breasts, then salt and pepepr each piece of meat. Put sliced onion on top of chicken, then put in all of the dried herbs and garlic cloves. Pour in vinegar and top with tomatoes. Cook on high for 4 hours on high or 8-10 hours on low. Serve over your favorite pasta or try with our angel hair squash recipe.
