Stir-fried Cabbage

 

We think of cabbage as a New Year’s Day favorite, but it’s a nutrient-rich veggie with cancer prevention benefits that pairs well and prepares easily on busy weeknights, too. With making a fresh start and real-food resolutions on the brain, this recipe works into most get-fit-quick wellness plans. It’s similar to a recipe on Michelle Tam’s blog (nomnompaleo.com), so it should appeal to caveman dieters, too.

  •  small head of cabbage, sliced crosswise into 1/4 inch strips

  • 1 small onion, thinly sliced

  • 1/2 cup diced bacon

Preparation

In a nonstick skillet, saute bacon pieces over a medium heat until nearly cooked. Add onions and saute until onions are browned and/or clear. Add shredded cabbage and saute until slightly fried, 3-4 minutes. Serve warm.
