Sweet Potato Souffle

IMG_0449Food photographer Kristine Stone was cooking in season long before it was in vogue. Now, with her Seasonal in Louisiana notecards and refrigerator magnets, she hopes to help others do the same. Here she uses sweet potatoes for a dish that doubles as a side or dessert!


  • 2lbs of Sweet Potatoes, peeled and chopped
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 3 Tbsp. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 3 eggs, beaten
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg


Heat the oven to 350 degrees. Spray a two quart dish with non-stick
spray. Bring the potatoes to a boil and boil them till they are soft.
Drain the water, add all the ingredients and mix with a hand mixer
till well blended. Pour mixture into the dish and bake in the over
for about 30min. Dish may expand while cooking and collapse after
it is removed from the oven. Sprinkle with confectioners sugar for that special touch.
