Two Bean Salad

If you follow the “Blue Zone” eating plans, you know that adding more beans to your diet is one of the healthiest changes you can make. Blue Runner, based in Gonzales for more than half a century, offers great products in store and tasty recipes on their website, including this yummy salad that can serve as an entree or a side and is especially appetizing as a cold entree during the summer heat.

Ingredients

  • 1 lb. Premium Select Blue Runner Red Beans
  • 1 lb. Premium Select Blue Runner Navy Beans
  • 1 cup chopped red onion
  • 1 cup finely chopped parsely
  • 2 tsp. finely chopped rosemary
  • 1/2 cup apple cider vinegar
  • 1/3 cup sugar
  • 4 Tbsp. olive oil
  • Salt
  • Pepper

Preparation

In a pot, add dry beans and cover with water by about two inches and add one teaspoon of salt. Bring mixture to a boil. Reduce heat and simmer, stirring occasionally, until beans are tender, but firm (about 45 minutes to an hour). Once done, remove from heat and rinse. In a large salad bowl, mix beans, onions, parsley, and rosemary until evenly mixed. In a separate bowl, add vinegar and olive oil. Mix in sugar until dissolved. Add about 2 tsp. salt and pepper. Stir dressing into the salad. Cove. Refrigerate to let flavors blend.
