Watermelon Avocado Mint Salad

Nothing is fresher — and tastier — than a mix of five or fewer raw ingredients. Alexander’s Executive Chef Cynthia Langhoff suggests you toss these seasonal favorites for a taste of summer.

Ingredients 

  • 1 4-pound seedless watermelon, peeled & cut into 1-inch chunks
  • 4-6 avocados, pitted, peeled & cut into 1-inch chunks
  • fresh mint, stems removed & cut into pieces
  • 4 oz. Manzetti lemon vinaigrette
  • ½ tsp. Kosher salt

 Preparation

Mix all ingredients. Toss gently. Garnish with fresh mint leaves. Serve in a serrated watermelon rind for a porch or patio party!
