Will’s Cajun Cake

  • 1 (20 oz.) can crushed pineapple with juice
  • 1 stick butter, softened
  • 2 c. self-rising flour
  • 1 1/2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour a 9×13 pan. Mix above ingredients until well blended. Pour mixture into pan and bake 30 minutes at 350. While cake is baking, combine the following ingredients for icing in a saucepan over low heat:

  • 1 stick butter
  • 1 small can evaporated milk
  • 1 c. pecans
  • 3/4 c. sugar

Cook over low heat until thickened. Add 1/2 tsp. vanilla. Pour over warm cake.
